I have been in charge of selling Yamanashi's traditional seasoning "suridane" for 3 years. It frustrates me that people outside the prefecture don't know it at all, so I work hard every day to promote it.

Why I started trying this way of eating

First, to briefly explain "suridane" to those who are not familiar with it, it is a traditional spicy seasoning loved in Yamanashi Prefecture for over 400 years. It features the roasted aroma from sesame oil and the umami of bonito broth, offering a completely different taste from regular shichimi togarashi.

What I strongly felt after becoming a sales representative was that this wonderful seasoning is almost completely unknown outside Yamanashi Prefecture. Frustrated by the thought, "It's a common flavor in Yamanashi, so why don't people from other prefectures know it?", I started carrying a small container with me and trying it in various dishes.

Whether eating out or cooking at home, it became a habit to try "What would happen if I add suridane to this?" I wanted to be able to share specific ways to use it when customers asked, "What is suridane?"

What I discovered in the meantime was the combination of "ramen × suridane." At first, I thought lightly, "Since it goes well with udon, it should also work with ramen, which is the same type of noodle..." but I was surprised after one bite. Convenience store cup noodles transformed into a deep flavor like that of a specialty shop.

Since then, whenever customers or colleagues ask, "What is suridane?", I always talk about this ramen. Some people worry, "It's an unfamiliar seasoning, is it okay?" but when they actually try it, they are surprised and say, "This is delicious! Where can I buy it?"

I want as many people as possible to know about "suridane," which can be called a treasure of Yamanashi.
With that thought, I decided to introduce it this time.

Why does it go well with ramen?

  • Because it is a broth-based seasoning

    Since suridane contains bonito broth, it pairs excellently with ramen soup. It adds spiciness while simultaneously deepening the umami.

  • Added roasted aroma of sesame oil

    Unlike regular shichimi, it has a roasted aroma from being fried in sesame oil. This matches perfectly with the oil in ramen, creating a rich and flavorful taste.

  • You can adjust the spiciness to your liking

    For those who love extreme spiciness, use plenty; for those who are not good with spicy food, start with a small amount. It's also attractive that one seasoning can cater to the preferences of the whole family.

Recommended usage

Prepare your usual ramen

Whether it's cup noodles, restaurant ramen, or homemade ramen, it's all good. Any ramen will become delicious.

Sprinkle a small amount of suridane

Start with about 1/4 teaspoon. Even if you like spicy food, please try a small amount first.

A fragrant aroma rises, allowing you to enjoy a deep flavor different from your usual ramen.

Especially recommended combination:
It goes well with miso ramen, tonkotsu ramen, and Iekei ramen, but personally, I feel it pairs best with tonkotsu ramen.
